Smooth and elegant texture with refreshing acidity. The nose shows lots of ripeness and some kirsch and cherry-stone notes. Rich cherry compote on the palate, quite restrained and well defined – not your usual simplistic strawberry fruit bomb. Tannins are fairly soft. Quite prominent oak but it is well integrated. Lots of potential fur further ageing.
Vineyards at 280m, gravel soils. Organic farming, handpicked. Fermentation in wood vats, without crushing. No added yeasts or enzymes. Three week fermentation. Hand punchdowns. Matured in 500lt tonneaux. Bottled 2019.
